Start by blending the rolled oats in a blender until they reach a finer consistency, similar to oat flour. This will help the oats create a smooth texture in the bake.

Mix Wet and Dry Ingredients:
In a large bowl, whisk together the eggs, milk, and cinnamon. Add the blended oats and baking powder, stirring until combined.

Grate the carrot and apple, then add them to the bowl with the chopped apricots and raisins. Stir everything together until well combined.
