Oatmeal, Apple, and Carrot Bake (No Sugar, No Flour)

Preheat your oven to 350°F (175°C) and lightly grease a baking dish (around 8×8 inches).

Prepare the oats:
In a large bowl, combine the rolled oats, cinnamon, nutmeg (if using), and salt.

Add the wet ingredients:
In a separate bowl, whisk together the eggs, vanilla extract, applesauce, and almond milk.

Add the apples and carrots:
Stir the grated apples and carrots into the oat mixture, followed by the wet ingredients. Mix until everything is well combined.

Add optional mix-ins:
If using, fold in the chopped nuts or seeds for extra texture.

Bake:
Pour the mixture into the prepared baking dish, spreading it out evenly. Bake for about 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Cool and Serve:
Let it cool slightly before cutting into squares. You can serve it warm as a cozy breakfast or snack!
