Peel the potatoes and cut them into small cubes. Dice the onions and bell pepper (if using).
Cook the Potatoes:
Boil the potato cubes in salted water until they’re tender, about 10-12 minutes. Drain and set aside.
Sauté the Vegetables:
In a pan, heat a little oil and sauté the onions and bell pepper (if using) until softened and slightly caramelized, about 5 minutes.
Mix the Ingredients:
In a large mixing bowl, combine the cooked potatoes, sautéed onions and bell peppers, paprika (if desired), cheese, eggs, corn starch, and salt. Stir well to combine everything into a thick mixture.
Form the Patties:
Take small portions of the mixture and shape them into round or oval patties with your hands.
Cook the Patties:
Heat a little oil in the same pan over medium heat and cook the patties for 3-4 minutes on each side, until golden brown and crispy.
Serve:
Serve the patties hot as a side dish or a main course, garnished with fresh herbs if desired.
