Begin by boiling the chopped cauliflower in water with 1 tsp of salt until soft, about 10-15 minutes. Drain the water well, then mash the cauliflower with a fork or potato masher until smooth. Let it cool slightly.
Prepare the Mixture:
In a large mixing bowl, combine the mashed cauliflower, breadcrumbs, grated cheddar cheese, ginger chili paste, chopped jalapeño, chili flakes, oregano, black pepper powder, corn flour, salt, and chopped coriander. Mix everything together until well combined. If the mixture is too soft, you can add a little more breadcrumbs or corn flour to help bind it.
Shape the Patties:
Take a small portion of the mixture and shape it into a round patty. Repeat until all the mixture is used. Coat each patty lightly with breadcrumbs on both sides for extra crispiness.
Bake the Patties:
Preheat your oven to 375°F (190°C). Grease a baking sheet with a light spray of oil or brush it with some oil. Place the patties on the sheet, ensuring they are not touching.
Bake for 20-25 minutes, flipping halfway through, until the patties are golden brown and crispy on the outside.
