Activate the Yeast: In a small bowl, combine warm milk, warm water, sugar, and yeast. Stir and let sit for 5–10 minutes until frothy.
Mix the Dough: In a large bowl, combine flour and salt. Pour in the yeast mixture and olive oil (if using). Mix with a spoon until a sticky dough forms. No kneading necessary!
Let it Rise: Cover the bowl with a towel and let the dough rise in a warm spot for 1 hour, or until doubled in size.
Shape the Bread: Divide the dough into equal portions (6–8 pieces). Gently shape into balls and flatten into round discs about ½ inch thick.
Cook: Heat a nonstick skillet or cast-iron pan over medium heat. Cook each flatbread for 2–3 minutes per side until golden spots form and the bread puffs slightly.
Serve Warm: Brush with melted butter or olive oil if desired and serve warm.
