In a large mixing bowl, whisk together flour, salt, and yeast.
Pour in warm water and stir with a wooden spoon until a shaggy, sticky dough forms.
Cover the bowl with plastic wrap or a kitchen towel and let it rise at room temperature for 12–18 hours (overnight) until doubled in size and bubbly.
Shape the Dough:
Lightly flour your work surface and hands. Turn the dough out onto the surface and gently shape it into a round ball. Do not knead.
Place the dough on a piece of parchment paper and cover with a towel. Let it rest for 30 minutes while the oven preheats.
Preheat the Oven & Bake:
Place a Dutch oven (or heavy oven-safe pot with a lid) in the oven and preheat to 450°F (230°C) for at least 30 minutes.
Carefully remove the hot Dutch oven, lift the dough using the parchment paper, and place it inside.
Cover with the lid and bake for 30 minutes.
Remove the lid and bake for another 10–15 minutes until golden brown and crusty.
Cool & Enjoy!
Transfer the bread to a wire rack and let it cool for at least 15 minutes before slicing.
