No-Bake Pecan Coconut Praline Cookies

In a medium saucepan, combine the sugar, butter, and heavy cream.
Bring to a simmer over medium heat, stirring occasionally. Allow the mixture to cook for 3-5 minutes, until it thickens and begins to form a caramel-like consistency.
Add Coconut and Pecans:

Remove the saucepan from heat, and stir in the shredded coconut, chopped pecans, and vanilla extract. Mix until everything is evenly combined.
Shape the Cookies:

Using a spoon, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Gently shape them into cookies if needed.
Let Set:

Allow the cookies to cool at room temperature for about 30 minutes to 1 hour, or until they have hardened and set.
Serve:

Once set, enjoy these chewy, nutty, and sweet praline cookies with a cup of coffee or as an afternoon snack!
