No-Bake Peanut Butter Oat Cookie Bites: The Easiest Healthy Treat

In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), and vanilla extract. Stir well until everything is evenly combined.

Add Optional Ingredients:
If you’re using flaxseed, shredded coconut, or a pinch of salt, add them to the mixture and stir until well incorporated. For extra richness, fold in the dark chocolate chips.

Chill the Mixture:
Cover the bowl with plastic wrap or a lid and place it in the refrigerator for 15-30 minutes. This step will make the mixture firm up slightly, making it easier to shape into cookie bites.

Shape the Cookie Bites:
Once chilled, scoop out small portions of the mixture (about 1 tablespoon per bite) and roll them into balls using your hands. If the mixture feels too sticky, wet your hands slightly to make rolling easier.

Chill Again (Optional):
Place the formed cookie bites on a baking sheet lined with parchment paper. You can enjoy them right away, but if you want them firmer, pop them back in the fridge for another 30 minutes to 1 hour.
