Stir in the rolled oats and powdered sugar until fully incorporated. The mixture should be thick and dough-like.
Form the Balls:
Using your hands, scoop out small portions of the mixture and roll them into balls about 1 inch in diameter. Place them on a parchment-lined baking sheet.
Chill the Balls:
Refrigerate the peanut butter balls for at least 30 minutes to firm up.
Optional Chocolate Dip:
If you’d like to dip the balls in chocolate, melt the semi-sweet chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring in between until smooth.
Dip each peanut butter ball into the melted chocolate, covering about half of it. Return to the parchment-lined sheet.
Final Chill:
Refrigerate the dipped peanut butter balls for another 15-20 minutes to allow the chocolate to set.
