In a large mixing bowl, combine the shredded coconut, almond flour, honey, melted coconut oil, vanilla extract, and a pinch of salt. Stir everything together until well combined. The mixture should be slightly sticky and hold together when pressed.
Form the Balls
Take about a tablespoon of the mixture and roll it into a ball, about 1 inch in diameter. Repeat until all the mixture is used up.
Chill
Place the coconut balls on a parchment-lined tray and refrigerate for at least 30 minutes to allow them to firm up.
