Nigella’s Sugar-Free Breakfast Bars: A Wholesome Way to Start Your Day

Preheat your oven to 350°F (175°C) and line a baking dish (approximately 8×8 inches) with parchment paper for easy removal.

Mix the Dry Ingredients:
In a large bowl, combine the rolled oats, chopped nuts, dried fruit, cinnamon, chia seeds or flaxseeds, and salt. Stir to combine.

Mash the Bananas:
In a separate bowl, mash the ripe bananas until smooth. Add the apple sauce (or mashed sweet potato), vanilla extract, melted coconut oil, nut butter, and milk. Stir until everything is well combined.

Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and mix thoroughly, ensuring the oats and nuts are evenly coated with the wet mixture.

Bake the Bars:
Transfer the mixture into the prepared baking dish and press it down firmly. Bake in the preheated oven for 25-30 minutes, or until the bars are golden brown and firm to the touch. You can check for doneness by inserting a toothpick into the center; it should come out clean when the bars are fully cooked.

Cool and Slice:
Allow the bars to cool in the baking dish for about 10 minutes before transferring them to a wire rack to cool completely. Once cool, slice into squares or rectangles and serve.
