My Christmas Soft Lemon Cookies: Sweet, Tangy, and Perfectly Soft

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Make the Cookie Dough:

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the egg, lemon zest, lemon juice, sour cream (or yogurt), and vanilla extract. Mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together. Be careful not to overmix.
Shape the Cookies:

Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. You can gently flatten the dough balls with the back of a spoon if you prefer a flatter cookie.
Bake the Cookies:

Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. The cookies will continue to firm up as they cool.
Make the Glaze (optional):

While the cookies are cooling, prepare the glaze by whisking together powdered sugar, lemon juice, and vanilla extract in a small bowl until smooth. Adjust the consistency with more powdered sugar or lemon juice if needed.
Glaze and Serve:

Once the cookies have cooled, drizzle the glaze over the top or dip the tops of the cookies into the glaze for a more uniform coating. Let the glaze set before serving.
