In a large skillet, heat olive oil over medium heat. Add the onions and bell pepper, and sauté for 5-7 minutes until softened. Add the garlic and cook for another 1-2 minutes. Set aside.
In the same skillet, add the rib-eye steak and cook for 3-5 minutes, stirring occasionally, until browned and cooked through. Season with salt and pepper to taste. Set aside.
Step 2: Prepare the Pizza Dough
Roll out the pizza dough on a floured surface into a rectangle shape.
Step 3: Assemble the Stromboli
Layer the steak mixture, sautéed onions, bell peppers, and both mozzarella and provolone cheeses evenly across the center of the dough.
Fold the sides of the dough over the filling, then carefully roll it into a tight log, sealing the edges.
Step 4: Bake the Stromboli
Place the stromboli on a baking sheet lined with parchment paper.
Brush the dough with melted butter, then beat the egg and brush it over the dough for a shiny golden finish.
Cut a few slits on top to allow steam to escape.
Bake for 20-25 minutes or until golden brown and crispy.
Step 5: Serve
Allow the stromboli to rest for a few minutes before slicing and serving.
