Minty Feta Flatbreads: Mediterranean Flavor in Every Bite

In a large bowl, mix self-raising flour and Greek yogurt until combined. Knead for 5 minutes until a soft, bouncy dough forms. If the dough is too sticky, add a little more flour.

Cover the dough with cling film and set it aside to rest.

2️⃣ Make the Filling:
In a separate bowl, combine the feta, cream cheese, finely chopped mint, wilted spinach (make sure to squeeze out any excess water), minced garlic, and black pepper. Mix everything until well combined. Set aside.

3️⃣ Shape the Flatbreads:
After the dough has rested, briefly knead it again and divide it into 4 equal pieces.

Flatten each piece into a circle and place a spoonful of the filling in the center of each. Carefully fold the edges to seal the filling inside, forming a pocket.

4️⃣ Cook the Flatbreads:
Heat a non-stick pan over medium-high heat. Place each flatbread in the pan and cook for 3-5 minutes on each side, until golden brown and crisp.

5️⃣ Serve:
In a small bowl, mix mint sauce and olive oil for serving. Drizzle over the cooked flatbreads.

Serve the flatbreads warm or cooled for a refreshing meal!
