Mini Pancake Recipe: Bite-Sized Breakfast Delights

In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix—the batter should be slightly lumpy.
Step 2: Cook the Mini Pancakes

Heat a non-stick skillet or griddle over medium-low heat and lightly grease it with butter or oil.
Using a tablespoon or a small scoop, drop spoonfuls of batter onto the skillet, forming small pancakes. Cook for 1-2 minutes until bubbles appear on the surface and the edges start to set.
Flip the pancakes gently with a spatula and cook for another 1-2 minutes, or until golden brown on both sides.
Remove the pancakes from the skillet and place them on a plate. Keep warm by covering with a kitchen towel while you cook the remaining pancakes.
Step 3: Serve

Stack the mini pancakes on a plate and serve with your favorite toppings. You can drizzle maple syrup, add fresh berries, or sprinkle powdered sugar for a sweet touch!
