Mini Flavor Bombs: Individual Garlic Parmesan Chicken Meatloaves


In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, minced garlic, milk, egg, oregano, basil, salt, and pepper. Mix until just combined. Avoid over-mixing to keep the meatloaf tender.

2. Shape the Meatloaves:
Divide the mixture into 6 equal portions. Form each portion into a small loaf and place them on a lined baking sheet or in a greased muffin tin for individual servings.

3. Bake the Meatloaves:
Preheat your oven to 375°F (190°C). Bake the mini meatloaves for about 20-25 minutes, or until they’re cooked through and golden brown on the edges.

4. Add the Topping:
While the meatloaves are baking, melt the butter in a small bowl. Once the meatloaves are out of the oven, brush each with the melted butter, and then sprinkle with the additional grated Parmesan cheese, garlic powder, and parsley (if using).

5. Serve:
Serve the individual garlic Parmesan chicken meatloaves hot, with your favorite side dishes such as roasted vegetables, mashed potatoes, or a light salad.
