Let the mixture cool slightly.
Assemble the Pinwheels:
Roll out the puff pastry sheet on a lightly floured surface.
Evenly spread the cooled minced meat mixture over the pastry.
Sprinkle with shredded cheese.
Roll the pastry tightly into a log, starting from the long side.
Place the rolled dough in the fridge for 10-15 minutes to firm up.
Cut and Bake:
Preheat oven to 375°F (190°C).
Slice the chilled roll into 1-inch (2.5 cm) thick pinwheels.
Place them on a lined baking sheet, spacing them slightly apart.
Brush the tops with egg yolk and sprinkle with sesame or poppy seeds if desired.
Bake for 20-25 minutes, or until golden brown and crispy.
