Mexican Tortilla Casserole – Everyone Will Enjoy This!!

Prepare the Meat: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain any excess fat from the skillet.

Season the Meat: Stir in the taco seasoning mix and the recommended amount of water (usually specified on the seasoning packet). Let it simmer for a few minutes until the seasoning is fully incorporated, and the mixture thickens slightly.

Layer the Casserole: Preheat your oven to 375°F (190°C). In a 9×13-inch baking dish, start by placing a layer of tortillas on the bottom. You may need to tear the tortillas to fit the shape of the dish.

Add the Beef Mixture: Spoon half of the seasoned beef mixture over the tortillas. Then, sprinkle 1 cup of the shredded cheddar cheese over the beef.

Repeat Layers: Add another layer of tortillas, followed by the remaining beef mixture and the second cup of shredded cheddar cheese.

Bake: Cover the casserole with foil and bake for 20-25 minutes. After this time, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden on top.

Serve: Let the casserole cool for a few minutes before serving. Top with sour cream and salsa if desired.
