Bring a large pot of water to a boil.
Add the shrimp and cook for 2-3 minutes, or until they curl into a loose ‘C’ shape and become opaque.
Drain the shrimp and cool them under running water or in an ice bath.
Once cooled, chop the shrimp into bite-sized pieces.
Mix the Ingredients:
In a large bowl, combine the chopped shrimp with celery, jalapeño, cucumber, avocado, cilantro, and onion.
Prepare the Sauce:
In a separate bowl, whisk together lime juice, orange juice, tomato juice, tomato sauce, grated garlic, hot sauce, salt, and pepper.
Combine and Chill:
Pour the sauce over the shrimp mixture and stir to combine.
Refrigerate for at least 1 hour to allow the flavors to meld.
Serve:
Serve chilled, garnished with additional cilantro or slices of lime if desired.
