Prepare the Bread: Brush one side of each bread slice with olive oil or butter.
Layer the Filling: On the non-oiled side of one slice, layer cheese, sun-dried tomatoes, olives, greens, and any optional add-ins. Sprinkle with herbs.
Assemble and Grill: Top with the second bread slice, oiled side up. Heat a skillet over medium heat and place the sandwich in the pan. Grill for 3–4 minutes per side, pressing slightly with a spatula, until the bread is golden brown and the cheese is melted.
Serve: Slice and serve hot!
