Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
Mix the Wet Ingredients:
In a mixing bowl, beat the eggs, sugar, and vanilla sugar (or extract) together until pale and slightly fluffy.
Add Flour:
Gradually add the flour to the mixture and stir until you get a smooth, soft dough. It should be thick enough to hold shape but not too stiff.
Shape the Cookies:
Use a spoon or your hands to shape small balls of dough and place them on the prepared baking sheet, leaving some space between each.
Bake:
Bake for 8–12 minutes, or until the edges are lightly golden. The centers should still look soft.
Cool and Dust:
Let cookies cool on a wire rack, then dust generously with powdered sugar.
