Preheat the Oven: Set your oven to 300°F (150°C). Line a baking tray with foil for easier cleanup.
Prepare the Sauce: In a small bowl, whisk together ketchup, brown sugar, soy sauce, vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper.
Season and Sauce the Ribs: Place the ribs meat-side up on a large piece of foil. Rub half of the sauce all over the ribs. Wrap them tightly in foil and place on the tray.
Bake Low and Slow: Bake for 2.5 to 3 hours until the meat is tender and pulls away easily from the bones.
Caramelize the Top: Remove ribs from the oven and carefully unwrap. Brush with remaining sauce. Increase oven temp to 425°F (220°C) and bake uncovered for 10–15 minutes or broil for 3–5 minutes until the glaze is bubbly and slightly charred.
Rest and Serve: Let rest for 5 minutes, then slice and serve.
