Mediterranean Spinach and Feta Crisps: A Light and Flavorful Snack

Prepare the filling: In a medium-sized bowl, combine the chopped spinach, crumbled feta cheese, grated Parmesan, garlic powder, onion powder, and olive oil. Season with salt and pepper to taste. Mix until well combined.
Prepare the dough: Lay the sheet of phyllo dough flat on a clean surface. Brush a thin layer of melted butter (or olive oil) over the phyllo sheet. Place a second sheet on top and brush with more butter. Repeat this process until you have about 4-5 layers of phyllo dough.
Fill and roll: Spoon small amounts of the spinach and feta mixture onto the phyllo dough, spaced evenly across the sheet. Roll the phyllo dough tightly, like a jelly roll, to encase the filling. Once rolled, cut the dough into small 1-inch wide slices to form crisps.
Bake the crisps: Preheat your oven to 375°F (190°C). Place the spinach and feta rolls on a baking sheet lined with parchment paper. Brush the tops with a little more melted butter or olive oil. Bake for 12-15 minutes, or until golden brown and crispy.
Serve: Once baked, remove from the oven and let cool slightly. Optionally, garnish with lemon zest and fresh herbs for a pop of color and added freshness. Serve warm.
