Mediterranean Roasted Vegetables – A Flavorful and Healthy Side Dish

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Step 2: Prepare the Vegetables
Wash and chop the zucchini, red onion, bell pepper, and baby potatoes.
In a large mixing bowl, combine all the vegetables.
Step 3: Season and Toss
Drizzle olive oil over the vegetables.
Add minced garlic, oregano, thyme, smoked paprika, salt, pepper, and red pepper flakes. Toss everything until evenly coated.
Step 4: Roast the Vegetables
Spread the vegetables evenly on the prepared baking sheet, ensuring they’re in a single layer for even roasting.
Roast in the preheated oven for 25-30 minutes, tossing halfway through, until the vegetables are tender and slightly caramelized.
Step 5: Serve and Garnish
Remove from the oven and transfer to a serving dish.
If desired, sprinkle with crumbled feta cheese and fresh parsley or basil.
Serve warm as a side dish or over grains like quinoa or couscous for a complete meal.
