Mediterranean Halloumi & Bean Bake

Heat olive oil in a frying pan over medium heat. Slice the halloumi and fry until golden brown on each side. Sprinkle with smoked paprika for extra flavor, then set aside.

2. Cook the Vegetables
In the same pan, add a bit more olive oil if needed. Add the chopped onion, yellow pepper, and garlic, and sauté until softened.

3. Add the Beans and Seasoning
Stir in the smoked paprika, cannellini beans, tomato puree, and chopped sun-dried tomatoes. Season with salt to taste and let it simmer for about 10 minutes, allowing the flavors to meld together.

4. Assemble the Dish
Once the bean mixture is ready, top it with the fried halloumi, fresh parsley, and a handful of olives. Let it cook for another 2-3 minutes for everything to come together.

5. Serve
Serve your Mediterranean halloumi and bean bake with crusty bread, roasted potatoes, or a light salad for a complete meal.
