Mediterranean Chicken Meatballs

Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it with nonstick spray.
2. Mix the Meatball Ingredients
In a large mixing bowl, combine:
Ground chicken
Panko breadcrumbs
Egg
Sun-dried tomatoes
Feta and Parmesan cheese
Minced garlic
Green onions and parsley
Salt and pepper
Mix until well combined, but do not overmix to keep the meatballs tender.
3. Shape the Meatballs
Use a small cookie scoop or your hands to form 2-inch meatballs.
Place them evenly on the prepared baking sheet.
4. Bake the Meatballs
Bake for 20-25 minutes, until lightly browned and cooked through.
The internal temperature should reach 165°F (75°C).
5. Serve & Enjoy
Optionally, squeeze fresh lemon juice over the meatballs for extra brightness.
Serve with tzatziki sauce, rice, pita, or a Mediterranean salad.
