Mediterranean Chicken Burgers with Yogurt Sauce and Fresh Relish: A Flavorful and Healthy Twist

In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, red onion, garlic, oregano, parsley, lemon zest, lemon juice, salt, and pepper. Mix everything together until well incorporated.
Divide the mixture into 4 equal portions and shape each portion into a patty, about 1/2 inch thick.
Heat the olive oil in a large skillet over medium heat. Once hot, add the patties and cook for 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F or 75°C).
Remove from the skillet and set aside to rest.
Make the Yogurt Sauce:

In a small bowl, whisk together the Greek yogurt, lemon juice, olive oil, garlic powder, cumin, salt, and pepper. Taste and adjust the seasoning as needed. Set aside.
Prepare the Fresh Relish:

In a medium bowl, combine the diced cucumber, tomato, red onion, olives, parsley, olive oil, and red wine vinegar. Stir until well mixed and season with salt and pepper to taste. Let it sit for a few minutes to allow the flavors to meld.
Assemble the Burgers:

Toast the burger buns in a toaster or on a skillet until lightly browned.
Spread a generous amount of yogurt sauce on the bottom half of each bun.
Place a chicken patty on top of the sauce, followed by a spoonful of fresh relish.
If desired, add a few fresh mint leaves and a lettuce leaf for extra freshness. Top with the other half of the bun.
Serve:

Serve the Mediterranean Chicken Burgers immediately with a side of roasted vegetables, a Greek salad, or sweet potato fries.
