Mediterranean Baked Fish with Tomatoes

Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the fish fillets.
Sauté Aromatics:

In a pan, heat olive oil over medium heat. Add the thinly sliced onion and minced garlic. Sauté for about 3-4 minutes until softened and fragrant.
Add Tomatoes and Seasoning:

Stir in the halved cherry tomatoes and dried oregano. Cook for another 3-4 minutes until the tomatoes begin to soften and release their juices.
Prepare the Fish:

Place the fish fillets in the prepared baking dish. Drizzle with fresh lemon juice, sprinkle with lemon zest, and season with salt and pepper.
Top with Tomato Mixture:

Spoon the sautéed tomato mixture over the fish fillets. Add the sliced Kalamata olives and capers (if using) on top.
Bake:

Bake for 15-20 minutes or until the fish is cooked through and flakes easily when tested with a fork.
Garnish and Serve:

Garnish with fresh parsley or basil before serving. Enjoy your Mediterranean-inspired meal!
