Assemble the Dish: Spread the sliced zucchini, red onion, cherry tomatoes, and kalamata olives evenly in the baking dish. Lay lemon slices over the vegetables.
Place the Fish: Gently place the seasoned fish fillets on top of the vegetables.
Make the Sauce: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper. Drizzle the sauce over the fish and vegetables.
Bake: Bake for 20–25 minutes, or until the fish flakes easily with a fork and the vegetables are tender.
Serve: Garnish with fresh dill or parsley and serve with lemon wedges.
