Meatloaf with Mashed Potatoes and Cheese: Comfort Food at Its Best

Preheat the oven to 375°F (190°C). In a large mixing bowl, combine ground beef, ground pork (if using), breadcrumbs, milk, egg, chopped onion, minced garlic, salt, pepper, thyme, paprika, Worcestershire sauce, ketchup, and Parmesan cheese. Mix everything together until fully combined.

Transfer the meat mixture into a greased loaf pan, shaping it into a loaf. Spread a thin layer of ketchup over the top of the meatloaf for extra flavor. Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F (71°C). Once done, remove from the oven and let it rest for 10 minutes before slicing.

2. Make the Mashed Potatoes:
While the meatloaf is baking, prepare the mashed potatoes. In a large pot, bring potatoes to a boil in salted water and cook until tender (about 15 minutes). Drain and return to the pot.

Mash the potatoes with a potato masher or use a hand mixer until smooth. Add butter, milk, and shredded cheddar cheese, and continue mashing until creamy. Season with salt and pepper to taste.

3. Combine and Serve:
To serve, plate a generous portion of mashed potatoes, top with a slice of meatloaf, and sprinkle with additional shredded cheese, if desired. Serve with extra ketchup or gravy on the side for added flavor.
