Marinated Baked Turkey Thigh Fillet with Herb-Infused Mustard Marinade

In a large bowl, combine 1 liter of water with 4 tablespoons of salt. Stir until the salt is fully dissolved.

Submerge the turkey thigh fillet in the brine, making sure it’s fully covered. Let it marinate in the refrigerator for at least 1 hour (or up to 6 hours) to enhance the turkey’s flavor and juiciness.

Make the Herb-Infused Mustard Marinade:

In a small bowl, whisk together Dijon mustard, olive oil, rosemary, thyme, garlic, apple cider vinegar, honey (if using), black pepper, and smoked paprika.

Once well combined, taste and adjust the seasoning as needed.

Marinate the Turkey Thigh Fillet:

After the turkey has finished brining, remove it from the saltwater and pat it dry with paper towels.

Coat the turkey fillet thoroughly with the mustard marinade, making sure to cover all sides.

Let it sit for 15-30 minutes to allow the flavors to meld.

Bake the Turkey:

Preheat your oven to 375°F (190°C).

Place the marinated turkey thigh fillet on a baking tray lined with parchment paper or in a roasting pan.

Bake for 45-60 minutes, or until the internal temperature of the turkey reaches 165°F (74°C). If you prefer a crispier skin, you can broil the turkey for the last 5 minutes of cooking.

Rest and Serve:

Once cooked, remove the turkey from the oven and let it rest for 10 minutes before slicing. This helps to retain its juices.
