Maple Bacon Carrots: A Sweet and Savory Side Dish You’ll Love

Preheat your oven to 400°F (200°C).
Peel and slice the carrots into rounds or sticks, depending on your preference.
Toss the carrot slices with olive oil, salt, and pepper in a large mixing bowl until evenly coated.
Step 2: Cook the Bacon

In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes.
Remove the bacon from the skillet and drain on a paper towel. Keep the bacon drippings in the pan.
Step 3: Roast the Carrots

Spread the seasoned carrots evenly on a baking sheet lined with parchment paper.
Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized. You can toss them halfway through for even roasting.
Step 4: Combine Bacon and Maple Syrup

Once the carrots are roasted, return them to the skillet with the bacon drippings over medium heat.
Add the cooked bacon to the carrots and pour in the maple syrup. Stir to combine, ensuring the carrots are coated in the syrup and bacon fat. Let them cook for an additional 2-3 minutes, allowing the flavors to meld together.
Step 5: Serve and Garnish

Transfer the Maple Bacon Carrots to a serving dish.
Garnish with fresh parsley or thyme, if desired, for an added pop of color and flavor.
Serve immediately and enjoy the sweet and savory goodness!
