Mango Puff Pastry Delight

In a saucepan, combine diced mango, sugar, cornstarch, and lemon juice over medium heat. Stir constantly until the mixture thickens, about 2-3 minutes. Once thickened, remove from heat and set aside.
Assemble the Pastries:

Preheat the oven to 375°F (190°C). Roll out the puff pastry sheet and cut it into squares or rectangles. Spoon the mango filling onto half of each piece of puff pastry. Fold the pastry over the filling and seal the edges with a fork to create a pocket.
Bake Until Golden:

Brush the top of each pastry with the beaten egg (egg wash). Bake in the preheated oven for 18-20 minutes, or until the pastries are golden and flaky.
Make the Glaze:

While the pastries are baking, whisk together the powdered sugar, milk, and vanilla extract to make the glaze. Adjust the consistency with more milk if needed.
Garnish & Serve:

Once the pastries are out of the oven, drizzle the glaze over them while they’re still warm. Garnish with fresh herbs like mint or basil, and serve with extra diced mango cubes on the side.
