Madeleines with Lemon and Greek Yogurt

Preheat your oven to 180°C (350°F).

In a large bowl, whisk the eggs and powdered sugar until the mixture becomes light and foamy.

Add the Greek yogurt, melted butter, lemon zest, and lemon juice. Mix until smooth and well incorporated.

Sift Dry Ingredients:

In another bowl, sift the flour, baking powder, and a pinch of salt.

Gradually incorporate the dry ingredients into the wet mixture. Stir gently until just combined. Be careful not to overmix, as this will help keep the Madeleines light and airy.

Prepare the Molds:

Butter and flour your Madeleine molds (or use non-stick baking spray for easier release).

Spoon about 3/4 of the batter into each indentation of the mold.

Bake:

Place the filled molds in the preheated oven and bake for 10-12 minutes, or until the Madeleines are golden brown and slightly puffy.

Let them cool for a few minutes in the molds before turning them out onto a wire rack to cool completely.
