If using frozen lobster tails, thaw them by placing them in the refrigerator overnight.
Use kitchen scissors to carefully cut through the lobster shell and expose the meat. Remove the meat from the shell, keeping it in large chunks. Discard the shells (or save them for making broth).
Season the lobster meat with salt and pepper.
Cook the Lobster Bites:
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Add the lobster pieces and cook for 2–3 minutes on each side until the lobster is opaque and lightly browned. Be careful not to overcook it. Remove the lobster bites from the skillet and set them aside.
Make the Garlic Butter Sauce:
In the same skillet, melt the remaining butter over medium heat.
Add the minced garlic and sauté for 1–2 minutes, or until fragrant.
Stir in the red pepper flakes, thyme, and rosemary, and cook for another 30 seconds.
Add the lemon juice, stir to combine, and let the sauce simmer for 2 minutes.
Combine and Serve:
Return the lobster bites to the skillet and toss them gently in the garlic butter sauce, coating them evenly.
Cook for an additional 1–2 minutes to warm the lobster through and allow the flavors to meld.
Garnish and Serve:
Transfer the lobster bites to a serving platter, drizzle with any remaining garlic butter sauce, and garnish with fresh parsley and an extra squeeze of lemon juice.
