Set your oven to 425°F (220°C).
Prepare the Lobster Tails:
Using kitchen shears, carefully cut down the top of each lobster shell lengthwise. Gently lift the meat out of the shell and place it on top for even cooking.
Season:
Brush the lobster meat with a little melted butter and season with salt and pepper.
Bake:
Arrange the lobster tails on a baking sheet and bake for 8–10 minutes, or until the meat is firm, opaque, and just cooked through.
Make the Garlic Butter Sauce:
In a skillet over medium heat, melt the remaining butter. Add minced garlic and sauté for about 1 minute, just until fragrant.
Add Cream and Cheese:
Pour in the heavy cream and stir in the Parmesan cheese. Simmer for a few minutes, until the sauce thickens.
Finish the Sauce:
Stir in lemon juice, and season with salt and pepper to taste.
Assemble:
Spoon the creamy garlic butter sauce over each cooked lobster tail and garnish with fresh parsley.
