In a medium bowl, combine almond flour, coconut flour, salt, lemon zest, and poppy seeds.
Mix in melted butter (about 4 tablespoons) or another oil of your choice until the dough comes together.
Press the mixture into the bottom of a greased or lined baking dish (8×8 inches works well).
Bake for 10-12 minutes or until the crust is lightly golden. Remove from the oven and let it cool while you prepare the filling.
Make the Filling:
In a large mixing bowl, whisk together Greek yogurt, honey, eggs, vanilla extract, lemon juice, lemon zest, and poppy seeds until smooth and well-combined.
Pour the filling over the cooled crust and spread it out evenly.
Bake the Bars:
Bake for about 20-25 minutes or until the filling is set and slightly golden on top. A toothpick inserted should come out clean.
Cool and Chill:
Allow the bars to cool completely in the baking dish. Then, transfer to the fridge and chill for at least 2 hours or until firm before slicing.
