Low-Carb Chicken Cheese Broccoli Casserole: Comfort Food Made Healthy

Preheat the oven to 375°F (190°C).
Steam or blanch the broccoli for 3-4 minutes until slightly tender. Drain and set aside.
Make the Creamy Sauce:

In a large mixing bowl, whisk together cream cheese, heavy cream, sour cream, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth.
Assemble the Casserole:

Grease a 9×13-inch baking dish with butter.
Layer the broccoli evenly at the bottom of the dish, followed by the shredded chicken.
Pour the creamy sauce over the chicken and broccoli, spreading it evenly.
Sprinkle cheddar cheese and Parmesan cheese on top.
Add Optional Topping:

If using, sprinkle crushed pork rinds or almond flour over the cheese layer for added crunch.
Bake:

Place the casserole in the oven and bake for 25-30 minutes, or until the cheese is bubbly and golden.
Serve:

Remove from the oven and let it cool for 5 minutes. Garnish with fresh parsley before serving.
