Low-Carb Bacon Cheeseburger Casserole: A Keto-Friendly Comfort Dish

Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish or a similar-sized casserole dish with non-stick spray or a bit of butter.

Cook the Bacon:
In a large skillet, cook the chopped bacon over medium heat until crispy. Once cooked, remove the bacon with a slotted spoon and set it aside on a paper towel to drain the excess fat.

Brown the Ground Beef:
In the same skillet, add the diced onion and cook over medium heat for 3-4 minutes, or until softened. Add the minced garlic and cook for another minute. Then, add the ground beef to the skillet and cook, breaking it up into crumbles, until browned. Drain any excess fat.

Prepare the Casserole Mixture:
In a large bowl, whisk together the heavy cream, eggs, ketchup, mustard, Worcestershire sauce, smoked paprika, salt, and pepper. Stir in the cooked bacon and browned beef mixture.

Assemble the Casserole:
Pour the beef and bacon mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

Bake the Casserole:
Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the cheese is melted and bubbly.

Serve:
Remove the casserole from the oven and let it cool for a few minutes before slicing. If desired, garnish with chopped pickles and fresh parsley. Serve with a side of low-carb vegetables, such as a green salad or roasted cauliflower.
