Boil the Potatoes: In a large pot, cover cubed potatoes with water and bring to a boil. Cook until fork-tender, about 12–15 minutes. Drain and return to the pot.
Mash and Mix: Add butter, milk, and sour cream to the potatoes. Mash until smooth and creamy. Season with salt and pepper.
Add the Good Stuff: Fold in 1 1/2 cups cheddar cheese, crumbled bacon (reserve a bit for topping), and chopped green onions.
Assemble and Bake: Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining cheese and bacon.
Bake: Bake at 375°F (190°C) for 20–25 minutes, or until cheese is melted and bubbling.
Garnish and Serve: Sprinkle with extra green onions before serving.
