Preheat oven to 400°F (200°C).
Scrub the russet potatoes clean and pierce them several times with a fork.
Place them directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, until fork-tender.
2. Prepare the Steak Bites
While the potatoes are baking, heat olive oil in a skillet over medium-high heat.
Season the steak bites with salt, black pepper, and garlic powder (if using).
Sear the steak for 4-5 minutes, stirring occasionally, until browned and cooked to your preferred doneness. Set aside.
3. Assemble the Loaded Potatoes
Once baked, remove the potatoes from the oven and cut a slit down the center. Fluff the insides with a fork and mix in a little butter for extra flavor.
Top each potato with steak bites, shredded cheddar cheese, sour cream, chopped green onions, and crumbled bacon.
Serve immediately and enjoy!
