Poke a few holes in each potato with a fork. Rub each potato with olive oil and sprinkle with sea salt.
Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skin is crispy and the inside is soft when pierced with a fork.
Cook the Steak Bites:
While the potatoes are baking, heat olive oil in a skillet over medium-high heat.
Season steak cubes with salt, pepper, smoked paprika, and Worcestershire sauce.
Add the steak bites to the hot skillet and sear for 2-3 minutes per side, or until browned and cooked to desired doneness.
Reduce heat to low, add butter and garlic, and stir until melted and fragrant (about 30 seconds).
Remove from heat and garnish with fresh parsley.

Slice each baked potato open and fluff the inside with a fork.
Sprinkle with shredded cheese, allowing it to melt slightly.
Add a generous scoop of sour cream, crumbled bacon, and green onions.
Top with juicy garlic butter steak bites and serve immediately.
