Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
Prepare the Sauce:
In a small bowl, whisk together eggs and Parmesan until smooth and creamy. Set aside.
Cook the Pancetta or Bacon:
While the pasta is cooking, heat a large skillet over medium heat. Add diced pancetta or bacon and cook until crispy, about 5–6 minutes.
Optional: Add minced garlic in the last minute for extra flavor.
Combine Pasta and Sauce:
Add the hot drained spaghetti to the skillet with the bacon (off the heat to avoid scrambling the eggs). Quickly pour in the egg and cheese mixture, tossing rapidly to coat the pasta and create a silky sauce.
Add reserved pasta water a little at a time until the sauce reaches your desired consistency.
Season and Serve:
Season generously with freshly cracked black pepper and salt if needed. Garnish with more Parmesan and fresh parsley, if desired. Serve immediately.
