Light & Fluffy Quarkkuchen (German Cheesecake)

Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour, sugar, and baking powder. Add the cold, cubed butter and use your fingers or a pastry cutter to incorporate the butter into the dry ingredients until the mixture resembles coarse crumbs. Add the egg and vanilla extract and mix until a dough forms. Press the dough evenly into the base of a greased 9-inch (23 cm) springform pan to create the crust.

Chill the Crust:
Place the crust in the refrigerator while you prepare the quark filling.

Make the Quark Filling:
In a large bowl, whisk together the quark cheese, cream cheese, sugar, eggs, and vanilla extract until smooth and well combined. Stir in the sour cream and lemon juice. If you prefer a thicker filling, mix in the cornstarch.

Assemble the Cake:
Pour the quark filling onto the prepared crust in the springform pan. Smooth the top with a spatula.
