Season both sides of the chicken breasts with salt, pepper, and dried thyme.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
Sauté Garlic and Green Beans:
In the same skillet, add the remaining tablespoon of olive oil and the butter. Once melted, add the minced garlic and sauté for about 1 minute, until fragrant.
Add the green beans to the skillet and season with salt, pepper, dried rosemary, and lemon zest. Cook, stirring occasionally, for 5-7 minutes, or until the beans are tender and slightly caramelized.
Add Lemon and Combine:
Return the cooked chicken breasts to the skillet. Drizzle the lemon juice over the chicken and green beans.
Stir gently to combine and coat the chicken and beans in the garlic butter sauce. Let everything simmer together for 1-2 minutes so the flavors meld.
Garnish and Serve:
Garnish with fresh parsley, if desired, and serve immediately.
