Layered Pita Roll with Eggs, Cheese, and Canned Fish: A Quick and Hearty Meal

Crack the eggs into a bowl and beat them well with a pinch of salt and pepper.
Heat the olive oil or butter in a non-stick skillet over medium heat.
Pour the beaten eggs into the skillet and cook, stirring occasionally, until they are scrambled and cooked through. Once the eggs are cooked, remove the skillet from the heat.
Step 2: Heat the Pita Bread

Warm the pita bread in a separate pan or microwave for 10-15 seconds until soft and pliable. This will make it easier to roll and prevent it from tearing.
Step 3: Assemble the Pita Rolls

Lay the warm pita bread flat on a clean surface.
Evenly spread the scrambled eggs across the middle of each pita.
Sprinkle the shredded cheese over the eggs while they are still warm, so the cheese melts slightly.
Add the canned fish on top of the cheese, distributing it evenly.
Step 4: Roll and Serve

Carefully fold in the sides of the pita and roll it up tightly, encasing the eggs, cheese, and fish inside.
Slice the pita roll in half for easy serving. If desired, garnish with fresh parsley for a burst of color and flavor.
