Layered Lemon Vanilla Dessert: A Refreshing, Creamy Delight

Prepare the Vanilla Layer:
In a medium mixing bowl, whisk together the vanilla pudding mix and cold milk for 2 minutes, until the mixture thickens.
In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Gently fold the whipped cream into the vanilla pudding mixture. Set aside.
Prepare the Lemon Layer:
In another bowl, whisk together the lemon pudding mix and cold milk until thickened, about 2 minutes.
Add lemon juice and lemon zest to the pudding and mix well. Set aside.
Assemble the Layers:
In a large trifle dish or individual serving glasses, begin by spooning in a layer of the vanilla pudding mixture at the bottom.
Follow with a layer of the lemon pudding mixture. Repeat layers until all the pudding is used, finishing with the lemon layer on top.
Whipped Cream Topping:
In a bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Spread the whipped cream over the top of the lemon layer.
Chill and Serve:
Refrigerate the dessert for at least 2 hours (or overnight) to allow the flavors to set and meld together.
Before serving, garnish with extra lemon zest or a few lemon slices if desired.
