Preheat your oven to 350°F (175°C). Grease a muffin tray or line with silicone muffin cups.
Beat the Eggs:
In a bowl, whisk the eggs until frothy. Add salt and black pepper to taste.
Mix the Veggies:
Add chopped onion, green chili, carrot, and coriander to the eggs. Mix well. You can also stir in a little cheese if desired.
Pour and Bake:
Pour the mixture evenly into muffin cups, filling each about ¾ full.
Bake:
Bake for 15–18 minutes or until the muffins are set and lightly golden on top.
Cool and Serve:
Let them cool slightly before removing. Serve warm or pack for later.
