Cook the Sugar Mixture:
In a medium-sized saucepan, combine the granulated sugar, heavy cream, water, and salt. Stir the mixture over medium heat until the sugar dissolves. Once dissolved, bring the mixture to a boil and let it cook for about 15 minutes, or until the mixture reaches the soft ball stage (about 235°F/113°C on a candy thermometer).
Cool the Mixture:
Once the mixture has reached the desired temperature, remove it from the heat. Stir in the vanilla extract. Let the candy mixture cool slightly, but not too much. You want it to be cool enough to handle, but still pliable.
Pull the Candy:
Once the candy has cooled enough to handle, use your greased hands to begin pulling the candy. Stretch it out and fold it over, then pull it again. Repeat the process for about 15-20 minutes, or until the candy becomes lighter in color and texture and starts to look fluffy.
Shape the Candy:
Once the candy reaches the desired consistency, shape it into small bite-sized pieces and place them on the greased surface to set.
Let it Set:
Allow the candy to cool completely and harden for about 1-2 hours before enjoying.
