Jam Crumble Tarts: A Sweet and Buttery Delight


Prepare the Dough: In a mixing bowl, cream together the margarine and brown sugar until light and fluffy. Add the egg and vanilla essence, mixing well until combined.

Add Dry Ingredients: Sift together the cake flour and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until the dough comes together.

Form the Tart Base: Preheat your oven to 180°C (350°F). Grease a tart pan or line with parchment paper. Take about 3/4 of the dough and press it evenly into the base of the tart pan, forming a crust.

Fill with Jam: Spoon the apricot jam into the center of the crust, spreading it out evenly.

Make the Crumble Topping: Crumble the remaining dough by rubbing it between your hands and sprinkle it over the jam.

Bake: Bake in the preheated oven for 25-35 minutes, or until the crust is golden brown and the jam is bubbling.

Cool and Serve: Allow the tarts to cool before slicing into wedges. Serve warm or at room temperature.
